Ingredients

1 Cup Water Kefir Grains
1 Cup White Sugar White or Raw Cane Sugar (same quantity as water kefir grains)
1 Pinch Crystal Salt
2 Litres Spring Water
1/2 Organic Lemon Organic Lemon

      Water Kefir is a slightly carbonated sweet tasting drink that has numerous health benefits and is a great replacement for soda.  It can be flavoured during a second fermentation process with a fruit infusion or juice to assist in the carbonation and create a great tasting probiotic beverage.  Sugar from fruit is required during the water kefir second fermentation as it feeds the water kefir culture.

      Combine all ingredients into a 3L glass container (clip-top).

      Seal the lid and swirl the ingredients until all the sugar is disolved.

      Place the sealed jar in a warm cupboard in your house and let the solution ferment for about 48 hours.

      When bubbles start rising from the the base of the container, your water kefir has fermented.

      Water kefir retains its sweetness during fermentation but if you find it too sweet, let it ferment for a few more days.

      Strain the water kefir grains using a plastic sieve (not metal) and start a new batch or store them in sugar water in the fridge (They can be stored for a couple of weeks as the fermentation process is slowed down due to the cold and they live on the sugar).

      Now that you have a water kefir base, you can proceed and do a second fermentation. Simply add a fruit or juice with a high sugar content (E.G. fresh fruit, fruit juice, frozen berries, whole spices, etc.) to the water kefir base liquid to create a flavoured infusion. If using fruits or berries, allow to infuse for 24 - 48 hours and then discard the fruit/berries.

      Secure the lid of the container you are doing the second fermentation in, store it in a warm cupboard and remember to burp your water kefir daily (releasing the pressure inside the bottle by opening the lid and sealing it again)

      Once the second fermentation has carbonated to your required level (due to the second fermentation), store your flavoured water kefir in the fridge (this slows down the fermentation process) and enjoy your water kefir health tonic daily... Remember to release the bottle pressure every 1-2 days by simply opening the sealed lid and closing it again.
